10/27/09 When cleaning pumpkins for pie, don’t discard the seeds. They make a nutritious and delicious, wholesome snack. Spread rinsed seeds on paper towels to dry. Toss with a little olive oil to cover and sprinkle arrange them on a cookie sheet or baking pan in a single layer. Season with sea salt, garlic salt, tabasco sauce, or cinnamon & sugar depending on your preference. Get creative! Roast them in the oven at 325°F for 20-45 minutes, stirring occasionally to roast them evenly and prevent burning. The seeds are done when they are light brown and fragrant. Some seeds have outer hulls; crack them off in your mouth and enjoy the inner nut meat.
