Diospyros virginiana x kaki One bite of a fresh persimmon and you'll know why they are enjoyed across the globe. Smooth, custardy, juicy and sweet, the persimmon flesh is heavenly and unquestionably habit-forming. Irresistible when fresh, they can also be dried or cooked into puddings, cakes, jams, ice cream, and much more. These delicacies are loaded with antioxidants, fiber, and B vitamins to name a few. The fruit ripen in the fall on deciduous trees, which drop their leaves after the first frosts, leaving the ripening fruit clinging to bare branches for a striking fall display.
Prior to planting the bare root tree, soak its roots in water for 2-3 hours. Position the plant so it is slightly deeper than the original soil line on the stem.
Select a site that receives at least 1/2 day sun, but full sun is best. Persimmons are tolerant of wet or light sandy soils. Dig a hole that's twice the diameter of the roots. Persimmon's new roots can be brittle, so handle gently. Carefully spread the roots into the hole and re-fill the hole with soil, making sure the original soil line on the trunk is buried slightly. Tamp the soil and water deeply. The plant will appreciate a layer of mulch around its base. Be careful not to mound the mulch up against the trunk. It is not necessary to prune the plant at planting time unless any branches are damaged.
Persimmons may break dormancy very late, and newly planted trees may not leaf out until summer or even autumn depending on conditions. Be patient and keep irrigated. Water regularly during the first growing season, but do not allow the soil to become soggy. Apply a well-balanced fertilizer during the late winter or early spring prior to the onset of new growth. Follow manufacturer's application rates. A slow-release natural fertilizer works well. If necessary, prune lightly during the winter months while the trees are dormant.
