Make thick jams and jellies without adding large amounts of sugar. This low methoxyl type pectin is extracted from citrus peel. Its jelling power is activated by calcium, not by sugar content. Recipes can be sweetened using sugar, honey or other sweeteners such as stevia. Also great for jello, aspic, sorbets, and yogurt. Makes 2-4 recipes. Kosher.
