Constructed of deluxe, heavy, all-cast aluminum. Positive action clamping locks align the cover to the base, forming a ''metal-to-metal'' steam-tight seal without a gasket, which automatically permits venting under unusual pressure conditions. This pressure cooker provides an extra margin of safety over conventional rubber or composition gasketed cookers. Easy to read geared steam gauge with the options of 5, 10, and 15 pound pressure regulator weight and automatic over-pressure release. Thirty quart capacity with 2 racks. Holds up to 19 pint or 14 quart standard jars. Also holds No. 1, 2, 3, and 10 cans. Not suitable for glass/flat top ranges, and intended for home use only. Measures 19 inches tall with an inside diameter of 12 1/4 inches. Made in the USA since 1930. By far, the preferred processing method of many master preservers, pressure cooking is also the only USDA-approved process for canning low acid foods.
