120 days. An exciting breeding development resulted in Bonilla, the first seed shallot with yellow flesh. The 1 1/2-2 inch globe-shaped shallot is very similar to the Dutch types. Excellent flavor, with a bright terra-cotta-colored skin. An indispensable ingredient for sauces. Stores up to 60 days.

CULTURE: Shallots prefer well dug, well-drained soil with plenty of organic matter and lots of sun. Seeds can be sown outdoors in the spring when soil temperatures are above 50°F. Sow seed 1/2 inch deep and 1/2-3/4inches apart. Thin seedlings to 2-3 inches. Each seed will usually produce a single shallot that can be harvested in summer when the tops begin to fall and turn brown. Our shallot varieties are adapted to 36-55°F latitude, unless otherwise noted.
SEED SPECS: Minimum germination standard: 75%. Usual seed life: 1 year. Approximately 100 seeds per 1/2 gram, 7 grams per 1/4 ounce.
